If your iPhone says "pairing unsuccessful" when trying to pair your phone to it, try the below network settings reset to clear any bluetooth bugs on your phone. This reset helps kill any bluetooth bugs in your phone, so it can also be helpful as additional bluetooth trouble shooting
Network & Bluetooth Reset: If nothing else works, go to Settings > General > Transfer or Reset iPhone > Reset > Reset Network Settings
Do not reset your entire phone, as this may clear your entire phone data. Note that this will erase all your saved Wi-Fi passwords, but it clears out corrupted Bluetooth caches.
